Micro Green Goddess Salad

Micro Green Goddess Salad

Salad:

Bed of East Coast Medley Mix, medium boiled egg, grilled asparagus, avocado, pumpkin seeds, cooked quinoa, snap peas, cucumber, Basil, Spice N Crunch, Pea Shoots, Micro Kale, Micro Broccoli and Micro-Green Goddess Dressing (below). 

For Dressing:

1/2 cup plain yogurt
1/2 an avocado
Handful of Goodleaf Basil
Handful of Goodleaf Pea Shoots
Handful of Goodleaf Micro Broccoli
3 tbsps chopped chives
Juice of half a lemon
Salt and pepper to taste  

A salad packed with freshness. 

For Dressing: 

Pulse in blender or food processor until smooth. Store in fridge up to 3 days.
