1/2 Clamshell GoodLeaf Baby Arugula
1/4 Each Watermelon
1/4 Cup Feta
1/4 Cup Fresh Mint Chopped
1 Each Juiced Lemon
1/4 Cup Extra Virgin Olive Oil
Salt to Taste
Slice watermelon into 1 inch thick pieces, spray grill with non-stick oil and grill on high until watermelon colours and softens.
Once watermelon cools slightly cut into ½ inch cubes, add the remaining ingredients to a bowl, toss with lemon juice and oil. Season with salt to taste and serve.
