Gazpacho with Arugula

Ingredients

2 Cups Tomato Juice
1 Medium Red Pepper Cored and Chopped
1 Large English Cucumber
1/2 Small Red Onion Diced
1 Each Jalapeno (optional)
1 Clove Garlic
1/2 Bunch Cilantro
1 Tblsp Lime Juice
1/2 Tsp Ground Black Pepper
2 Tsp Salt
1 Tsp Cumin
1 Tsp Paprika
1/2 Tsp Ground Coriander
1 Tsp Dried Oregano
1 Cup GoodLeaf Farms Arugula
75 Grams GoodLeaf Farms Brocooli Shoots

Directions:

Combine all ingredients in a big mixing bowl, allow to sit for 1-2 hrs or even overnight in refrigerator. Buzz in a blender until smooth. Season to taste with salt. Serve in a cold bowl, top with arugula, broccoli shoots, and an optional dollop of sour cream.
