Superfood Nachos

These aren't your average nachos! Fibre-packed, nutrient-dense, and surprisingly dairy-free - this recipe is proof that healthy doesn't mean boring.

  • 1 Bag tortilla chips
  • 1 Package GoodLeaf Magic Broccoli Microgreens
  • 1 Batch of chipotle black beans (recipe below)
  • 1 Large avocado, cubed
  • 1/3 Cup pickled hot peppers
  • 1/4 Cup red onion
  • Cilantro crema, to taste (recipe below)
  • Salsa, to taste
  • Hot sauce of choice, to taste

Chipotle Black Beans

  • 2 Tbsp olive oil
  • 1 Small onion, diced
  • 3 garlic cloves, diced
  • 2 Tbsp tomato paste
  • 1 Tbsp chipotle powder
  • 2 Tsp cumin
  • 2 Tsp smoked paprika
  • 1 Tsp onion powder
  • 1 Tsp garlic powder
  • Salt & pepper, to taste
  • 1 Pinch of sugar
  • 1 Can black beans (540ml), rinsed and drained
  • 1/2 lime, juiced

Cilantro Crema

  • 1 Large handful of cilantro
  • 1/2 avocado
  • 1 garlic clove
  • 1/2 lime juiced, to taste
  • 1 Tbsp maple syrup
  • 2 Tbsp olive oil 
  • Salt & pepper, to taste
  • Water, as needed

Chipotle Black Beans

  1. Add olive oil to a hot skillet on medium heat. Once hot, add onion and cook until translucent.
  2. Next, add garlic, tomato paste and remaining seasonings and lightly cook to bloom flavours for a few mins, careful not to burn.
  3. After a few mins add black beans to the pan. Stir to mix in all flavours. Once well mixed and bean are hot, squeeze in the lime.
  4. Add a few splashes of water if needed and stir well.
  5. Adjust seasonings as desired and set aside to cool slightly before assembling for nachos.

Cilantro Crema

  1. Add all ingredients to a blender, including a few tbsp of water. 
  2. Blend on high, adding more water until desired consistency is reached. Ensure you are tasting along the way, add more seasoning as needed. 
  3. Once blended you should have a very creamy consistency. Set aside until you are ready to assemble nachos.

Nachos

  1. Add tortilla chips to a parchment lined baking sheet and lightly brown in oven on broil. Watch closely as they can burn easily, mixing a few times to ensure an even cook - this should only take a few mins. 
  2. Once lightly browned remove from the oven and begin assembling nachos.
  3. Layer each ingredient, adding more or less as desired and ensuring an even distribution. 
  4. Serve directly from the baking sheet and enjoy!
