Carrot & Ginger Salad
This asian-style salad is bright, punchy, and packed full of nutrients. Pairs perfectly with tofu, chicken, pork or shrimp.
Ingredients

KICK'N MUSTARD
Salad
- 1 Pack GoodLeaf Kick'n Mustard Microgreens
- 3 Radishes, thinly sliced
Dressing
- 1 Carrot, peeled & chopped
- 2 Inch Cube Fresh Ginger
- 1 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 Tsp Rice Wine Vinegar
- Pinch of Salt
- 1/4 White Onion, peeled & chopped
- 1/4 Cup Canola oil

Dressing:
Place dressing ingredients, excluding oil, into the bowl of a food processor. Pulse until chunky but combined.
Place on low speed and slowly drizzle in oil, until fully incorporated.
Assembly:
Layer GoodLeaf Kick'n Mustard Microgreens and radishes in a large bowl, top with Carrot Ginger Dressing, and serve immediately.
