Chimichurri Burger

For the microgreens-based chimichurri sauce

1½ cup of GoodLeaf Kick'n Mustard Microgreens
⅓ cup of Olive oil
2 tbsp of Red wine vinegar
1 clove of Garlic
¼ tsp Red pepper flakes
¼ tsp Cumin
¼ tsp Salt
Pepper, to taste

For the garlic mayo
3 tbsp of Mayonnaise
½ clove of Garlic
½ tsp Lemon juice
Salt and pepper, to taste

For the burgers
4 Burger buns
4 Patties, of choice
2 tsp Steak seasoning
2 tbsp BBQ Sauce, optional
1 package of GoodLeaf Kick'n Mustard Microgreens
250g Grilled red peppers
100g Goat cheese or cheese of choice

Prepare the Microgreen Chimichurri by adding all the ingredients to the food processor, blend until finely chopped - you want to keep a bit of texture! Set aside.

Mix all the ingredients together for the garlic mayonnaise. Set aside.

Add the steak spices to the meat, then grill according to the package instructions or your preferences. Once they have finished cooking, brush with BBQ sauce. Grill your buns at the same time.

Assemble all ingredients + remaining burger ingredients & enjoy!
