Croissant Egg Boats
This recipe is perfect for breakfast or brunch! Perfect to prep ahead of time & enjoy later.

- 1/2 Package of GoodLeaf Magic Broccoli Microgreens, plus more for topping
- 7 Large eggs
- 1 Small shallot, finely diced
- 1/2 Cup cheddar cheese, shredded
- 1/2 Cup cream or milk
- 1 Tsp dried basil
- Salt & pepper, to taste
- 4 Large store-bought croissants

- Pre-heat oven to 325 degrees C.
- In a bowl, mix together all ingredients, except for croissants, and set aside.
- Cut out a diamond-shaped hole in the croissants, removing excess inner pastry as needed. You are looking to create just enough room to pour in your egg mixture.
- Once croissants are prepped set on a parchment lined baking tray. Evenly pour in your egg mixture.
- Bake in the oven for 25-30 mins or until egg is fully cooked.
- Let sit for 10-15 mins to cool and enjoy!
