Mandarin Ramen Crunch Salad

Crunchy, with the perfect balance of sweet and salty, this chef-inspired salad is sure to impress your tastebuds.

Dressing

·      1/4 Cup Rice Vinegar

·      3 Tbsp Olive Oil

·      2 Tbsp Honey

·      1 Tbsp Soy Sauce

·      Pepper, as desired

Salad

·      1 Pack Ramen Noodles

·      2 Tbsp Black Sesame Seeds

·      1/2 Cup Edamame, shelled

·      1/2 Cup Cherry Tomatoes, halved

·      2 Scallions, thinly sliced

·      1/2 Cup Mandarin Oranges

·      1 Pack GoodLeaf Sweet & Spicy Mix

Place a rack in the center of your oven and preheat the oven to 425 degrees F.

Crumble the ramen noodles onto a baking sheet and spread them in a single layer. Bake for 5 minutes, remove from the oven, add the sesame seeds, and toss, then bake for 1 to 3 additional minutes until fragrant and golden. Watch closely so that the mixture does not burn. Set aside.

In a small bowl, briskly stir together all of the dressing ingredients and set aside.

In a serving bowl, toss together GoodLeaf Sweet & Spicy Mix, and remaining salad ingredients.

Drizzle with dressing as desired and enjoy!
