Intensely Arugula
- 2 cups packed GoodLeaf Intensely Arugula Microgreens
- 1/4 cup toasted pine nuts
- 1/4 cup grated Parmigiano Reggiano
- 1 clove garlic
- Zest of 1/2 lemon
- 2–3 tbsp lemon juice
- 1/2 cup olive oil
- Salt & pepper to taste
- Gemelli pasta (or pasta of choice), cooked

- Combine garlic, pine nuts, and Parmigiano in a food processor and blend until broken down. Add micro arugula, lemon juice, and zest, then slowly stream in olive oil until smooth. Season to taste.
- Toss with warm, cooked pasta, using reserved pasta water as needed to combine.
- Serve and enjoy!
