Micro Arugula Pesto Pasta

  • 2 cups packed GoodLeaf Intensely Arugula Microgreens
  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmigiano Reggiano
  • 1 clove garlic
  • Zest of 1/2 lemon
  • 2–3 tbsp lemon juice
  • 1/2 cup olive oil
  • Salt & pepper to taste
  • Gemelli pasta (or pasta of choice), cooked

Intensely Arugula
  1. Combine garlic, pine nuts, and Parmigiano in a food processor and blend until broken down. Add micro arugula, lemon juice, and zest, then slowly stream in olive oil until smooth. Season to taste.
  2. Toss with warm, cooked pasta, using reserved pasta water as needed to combine.
  3. Serve and enjoy!
