Protein-Packed Pea Shoot & Asparagus Salad

Supercharged with Sweet Pea Shoots, this recipe is filled with nutrients like Vitamin A, C, K and Folate, and complex carbs and protein from the quinoa, chickpeas! This salad is sure to keep you full and satisfied!

  • 1 Cup quinoa, cooked
  • 1 Cup chickpeas
  • 1 Cup asparagus, chopped & lightly blanched
  • 1 Package GoodLeaf Sweet Pea Shoots
  • 1 Large avocado, cubed

Red Wine Vinaigrette

  • 1 Small shallot, chopped
  • 1/2 Cup olive oil
  • 1/3 Cup red wine vinegar
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • Salt & pepper, to taste

SWEET PEA SHOOTS

1. Cook quinoa and quickly blanch asparagus (approx. 60-90 secs). Let both cool completely.

2. Mix together ingredients for the red wine vinaigrette (can also use store bought).

3. Once quinoa and asparagus are cooled completely, assemble salad with remaining ingredients and drizzle on dressing to taste.

4. Enjoy!
