Whipped Feta Crostini
These Whipped Feta Crostini’s infused with Intensely Arugula Microgreens add a nutty and peppery kick to this app that's sure to impress your guests!

Ingredients

· 1 Large Baguette
· 2 Packs GoodLeaf Intensely Arugula Microgreens
· 2 Cups Feta Cheese
· 2 Tbsp Olive Oil
· 1 Lemon, juice and zest
· 1 Pinch Salt
· 1/3 Cup Roasted Red Pepper, diced
· 1/3 Cup Walnuts or Pecans, chopped
Instructions
Preheat oven to 350 degrees F. Slice baguette and brush with olive oil. Place on a baking sheet and bake at 350 degrees F for 10-12 minutes or until golden.
In a food processor, add feta, olive oil, lemon juice, zest and salt. Blend until combined, adding some of the juice from the feta if too crumbly
Add a pack of Intensely Arugula Microgreens to the processor and continue blending until smooth.
Top baked baguette slices with feta spread, roasted red pepper and chopped walnuts.
Top with any dressing of choice: balsamic, honey, more olive oil.
