Winter Glow Salad
Packed with Antioxidant rich and Vitamin A packed foods for glowing skin – this delicious salad is sure to have you glowing from the inside out this winter!

Ingredients

· 1/2 Small butternut squash, peeled into thin strips
· Olive oil, as needed
· Salt and pepper, to taste
· 1 Package GoodLeaf True North Blend
· 1 Package GoodLeaf Magic Broccoli Microgreens
· ½ Cup fresh pomegranate kernels
· ½ Cup walnuts, chopped
· ½ Cup feta (optional)
Honey Mustard Dressing
· ¼ Cup Dijon Mustard
· 3 Tbsp Honey (or more to taste)
· 3 Tbsp Apple Cider Vinegar (or more to taste)
· ¼ Cup Olive Oil
· 1 Tbsp Lemon Juice
· Salt & pepper, to taste
Instructions
Preheat oven to 425 degrees C.
While oven is heating prep butternut squash by peeling, cutting and using a peeler, shave into thin strips. Toss squash in olive oil and bake for ~15 mins. Toss on pan to cook evenly, adding a sprinkle of salt and bake for approx. 10 more mins until crispy.
While squash is baking, add dressing ingredients to a mason jar and set aside.
Assemble by adding to bowl with remaining salad ingredients. Add in homemade dressing to taste and enjoy!
