Zesty Radish
~1 lb Shrimp, raw & peeled
Old Bay seasoning, to taste
Lime juice, to taste
Olive oil, to taste
1 package GoodLeaf Zesty Radish Microgreens
6-8 small tortillas
For the Mango Salsa:
1 large Mango, finely diced
1/4 red onion, finely diced
1/2 jalapeno, finely diced
1 handful cilantro, finely chopped
1-2 tbsp maple syrup
1 lime, juiced
Salt, to taste

- In a bowl, to the shrimp add Old Bay seasoning, olive oil and squeeze of lime juice to taste. Let sit for 5-10 mins before adding to BBQ skewers. Once all shrimp are skewered add to hot BBQ to grill.
- While shrimp are grilling, make your mango salsa but combining, fresh mango, red onion, cilantro, jalapeno, maple syrup, lime juice and salt. Mix well and set aside.
- Once shrimp are cooked remove from the grill to cool slightly.
- While shrimp is cooling, heat up tortillas on the grill. This should only take 30 seconds per side.
- Assemble tacos by layering Zesty Radish Microgreens on the tortilla, followed by cooked shrimp, and mango salsa. Finish with another squeeze of fresh lime if desired and enjoy!
