Zesty Shrimp Tacos

~1 lb Shrimp, raw & peeled

Old Bay seasoning, to taste

Lime juice, to taste

Olive oil, to taste

1 package GoodLeaf Zesty Radish Microgreens

6-8 small tortillas

 

For the Mango Salsa:

1 large Mango, finely diced

1/4 red onion, finely diced

1/2 jalapeno, finely diced

1 handful cilantro, finely chopped

1-2 tbsp maple syrup

1 lime, juiced

Salt, to taste

  1. In a bowl, to the shrimp add Old Bay seasoning, olive oil and squeeze of lime juice to taste. Let sit for 5-10 mins before adding to BBQ skewers. Once all shrimp are skewered add to hot BBQ to grill. 
  2. While shrimp are grilling, make your mango salsa but combining, fresh mango, red onion, cilantro, jalapeno, maple syrup, lime juice and salt. Mix well and set aside. 
  3. Once shrimp are cooked remove from the grill to cool slightly. 
  4. While shrimp is cooling, heat up tortillas on the grill. This should only take 30 seconds per side. 
  5. Assemble tacos by layering Zesty Radish Microgreens on the tortilla, followed by cooked shrimp, and mango salsa. Finish with another squeeze of fresh lime if desired and enjoy!
