Rainbow Goddess Bowl

Rainbow Mix
  • 1 cup quinoa, cooked
  • 1 cup GoodLeaf Rainbow Mix Microgreens
  • 1 handful shredded carrot
  • 1 grilled chicken breast, cubed
  • 1 handful cherry tomatoes, halved
  • 1/2 avocado, cubed
  • 1 handful red onion, sliced

Goddess Dressing

  • 1/3 cup raw cashews, soaked
  • 3 tbsp olive oil
  • 3 tbsp water
  • Juice of 1/2 lemon
  • 1 handful dill
  • 1 handful parsley
  • 1 green onion
  • 1 garlic clove
  • 1 handful GoodLeaf Rainbow Mix Microgreens
  • Salt and pepper, to taste

Rainbow Mix

Grill chicken and set aside.

Add all dressing ingredients to a blender and blend on high until smooth.

Assemble the bowl by adding all ingredients as desired, then drizzle with goddess dressing to taste.
