Rainbow Mix
- 1 cup quinoa, cooked
- 1 cup GoodLeaf Rainbow Mix Microgreens
- 1 handful shredded carrot
- 1 grilled chicken breast, cubed
- 1 handful cherry tomatoes, halved
- 1/2 avocado, cubed
- 1 handful red onion, sliced
Goddess Dressing
- 1/3 cup raw cashews, soaked
- 3 tbsp olive oil
- 3 tbsp water
- Juice of 1/2 lemon
- 1 handful dill
- 1 handful parsley
- 1 green onion
- 1 garlic clove
- 1 handful GoodLeaf Rainbow Mix Microgreens
- Salt and pepper, to taste

Grill chicken and set aside.
Add all dressing ingredients to a blender and blend on high until smooth.
Assemble the bowl by adding all ingredients as desired, then drizzle with goddess dressing to taste.
