Street Corn Inspired Pasta Salad

2 cups Pasta, cooked (we used Orecchiette)

1 cup Corn, grilled (approx. 2 cobs)

1 Package GoodLeaf Intensely Arugula Microgreens

1 handful Red onion, sliced

1/2 cup Cherry tomatoes, sliced

1/4 cup Feta

2 tbsp fresh Cilantro, chopped

1/2 Jalapeno, thinly sliced (optional)

Taco seasoning of choice, to taste

 

For the Dressing:

5 tbsp Mayo

2 tbsp Greek yogurt (or sour cream)

1 tbsp Olive oil

1 Lime, juiced

1 Garlic clove, minced

1 tsp Smoked paprika

Salt and pepper, to taste

  1. Cook pasta and grill corn. Once done, set both aside to cool.
  2. While cooling, mix together dressing ingredients.
  3. Add all ingredients to a bowl and mix.
  4. Enjoy!
