Intensely Arugula
2 cups Pasta, cooked (we used Orecchiette)
1 cup Corn, grilled (approx. 2 cobs)
1 Package GoodLeaf Intensely Arugula Microgreens
1 handful Red onion, sliced
1/2 cup Cherry tomatoes, sliced
1/4 cup Feta
2 tbsp fresh Cilantro, chopped
1/2 Jalapeno, thinly sliced (optional)
Taco seasoning of choice, to taste
For the Dressing:
5 tbsp Mayo
2 tbsp Greek yogurt (or sour cream)
1 tbsp Olive oil
1 Lime, juiced
1 Garlic clove, minced
1 tsp Smoked paprika
Salt and pepper, to taste

- Cook pasta and grill corn. Once done, set both aside to cool.
- While cooling, mix together dressing ingredients.
- Add all ingredients to a bowl and mix.
- Enjoy!
