Ingredients

Zesty Radish
1 package GoodLeaf Zesty Radish Microgreens
1 candy cane beet (or regular beet), thinly sliced
1 mini cucumber, thinly sliced into ribbons
1 handful raspberries
1 handful crushed pistachios
1/4 cup feta, crumbled
Raspberry vinaigrette, to taste
For the Raspberry Vinaigrette
8 raspberries, mashed
2 tbsp red wine vinegar
1/2 tbsp whole grain mustard
1 tbsp maple syrup
3 tbsp olive oil
Salt & pepper, to taste

1. Using a heart-shaped cookie cutter, cut out sliced beets and set aside.
2. Add all ingredients to a bowl.
3. Make vinaigrette by adding mashed raspberries and remaining ingredients to a bowl and whisk.
4. Drizzle your vinaigrette over the salad as desired & enjoy!
