Assemble ingredients on top of a bed of GoodLeaf Arugula.

For Dressing: 

Pulse ingredients in blender or food processor until smooth. Store in fridge up to 3 days.


For Salad:

Asparagus, grilled
1 Avocado
Pumpkin seeds
Quinoa, cooked
Snap Peas
GoodLeaf Micro Spicy Mustard Medley
GoodLeaf Pea Shoots
GoodLeaf Micro Broccoli

For Dressing:

Quantity Item
1/2 Cup Plain Yogurt
1/2 Avocado
1 Handful Basil
1 Handful GoodLeaf Pea Shoots
1 Handful GoodLeaf Micro Broccoli
3 tbsp Chives, chopped
Juice of half a lemon
Salt and pepper to taste
