Curried Chicken Salad

Combine all ingredients, place in fridge and allow to sit for 1 hour.

Assemble between two pieces of your choice of bread, toasted and a handful of your favourite micro greens.

2 Chicken Breasts, cooked, cubed
2 tbsp Fresh Cilantro, washed, chopped
1/2 Cup Red or Green Grapes, halved
1/4 Red Onion, finely diced
1 Stem Green Onion, sliced
1 tbsp Yellow Curry Powder
1/2 Cup Plain Greek Yogurt
Salt and Pepper, to taste
1 Package GoodLeaf Microgreens, of choice
